Cottage Pie, or as we call it, Shepherds Pie is a household favorite. I am calling it Cottage Pie, as a true Shepherds Pie is made from lamb, but we prefer beef. My daughter absolutely loves this dinner, but I have not made it in a while. I can't remember if I had this growing up, or if I started making it early on in our marriage, but I do know it has always been something I could not mess up and everyone would enjoy it. In a family of four, and some of us (me) are very picky eaters, meals that please all, are few and far between. here is how I make mine.
I start off with one diced onion in some olive oil, and then I add 2 Lbs. of beef. Our beef is from a quarter cow we invested in.
I seasoned this with salt, pepper, a little bit of this beef seasoning and beef bouillon to taste. You can just do salt and pepper if you want or get creative and add your own blend.
while the beef is browning, I started the potatoes. I hate making real potatoes, so fake stuff it is!
I put the browned meat in the casserole dish and then added a bag of frozen corn.
After that, I topped the corn with the mashed potatoes. and cheese. I wanted to make mine Fancy so i shredded some smoked gouda and mixed it with some Colby jack.
Then bake it until the cheese is melty and has some brown bits. and enjoy!
